It looks as if access logs are rotated and gzipped daily. In the past I have used e.g. AWStats to do simple analytics without adding tracking JS to my sites. Even if no canned apps are planned to facilitate this, it would be useful to have documentation and whatever support is needed for analytics that scans access logs and potentially provides a web interface to the results for authenticated users. Are there any plans to provide something like this?

Bump. Server side tracking would be awesome instead of something like Matomo.
AWStats or something similar would be nice.

You might be able to set up and use GoAccess in the meantime? https://goaccess.io/
You could cron it to run regularly, generate nice HTML reports and serve those with a static app.
It generates a really nice standalone web page. There's a demo here: https://rt.goaccess.io/?20200714222654
